The Head Barman is responsible for the efficient and professional operation of the lodge bar, ensuring an exceptional five-star beverage experience for guests. The position requires a highly skilled and personable hospitality professional with excellent knowledge of cocktails, wines, spirits, beers and other beverages. The Head Barman will lead and mentor the bar team, maintain strict stock-control procedures and ensure that all beverage service is delivered consistently to luxury lodge standards. The successful candidate must be confident interacting with international guests and able to create personalised and memorable beverage experiences. KEY DUTIES AND RESPONSIBILITIES 1. Bar Operations Manage the day-to-day operation of the lodge bar. Prepare and serve alcoholic and non-alcoholic beverages to five-star standards. Prepare cocktails, mocktails, premium spirits, beers, wines, coffees and speciality beverages. Ensure correct preparation, presentation and service of all beverages. Maintain a fully stocked, clean, organised and attractive bar at all times. Complete daily bar opening and closing procedures. Ensure all bar equipment, glassware and utensils are properly maintained. Monitor cleanliness and hygiene standards within the bar and beverage areas. Ensure correct storage and rotation of beverages. Maintain appropriate par levels for all bar stock. 2. Guest Experience Provide warm, personalised and professional service to every guest. Build a strong rapport with guests and anticipate their beverage preferences. Engage confidently with international guests and provide knowledgeable recommendations. Make recommendations regarding cocktails, wines, spirits and beverage pairings. Prepare personalised drinks according to guest preferences. Assist in creating memorable bush-bar, sundowner and special guest experiences. Handle guest requests and complaints professionally and promptly. Maintain a high level of discretion when dealing with VIP and high-profile guests. Luxury lodge roles specifically emphasise personalised service, beverage knowledge and the ability to create memorable guest experiences. 3. Beverage Knowledge Maintain comprehensive knowledge of: Premium and local wines Champagne and sparkling wines Whiskies Cognac and brandy Gin and vodka Rum and tequila Craft and imported beers Liqueurs Cocktails and mixology Mocktails and non-alcoholic alternatives Coffee and speciality beverages Keep up to date with current beverage trends. Assist with the development of signature cocktails. Assist with seasonal beverage selections and menus. Understand basic wine and food-pairing principles. 4. Stock Control & Cost Management Conduct regular bar stock counts. Maintain accurate stock records. Monitor beverage usage and investigate variances. Control wastage, breakages and spillage. Ensure correct receiving and storage of beverage deliveries. Monitor minimum and maximum stock levels. Assist with beverage ordering and requisitions. Ensure stock is secured at all times. Monitor beverage costs and assist management with achieving departmental targets. Report discrepancies, shortages or unusual stock movements immediately. Stock control, inventory, ordering, wastage reduction and financial awareness are specifically identified as important requirements for current Head Barman roles in Limpopo. 5. Team Leadership Supervise and lead junior bartenders and bar attendants. Allocate daily duties and responsibilities. Ensure adequate staffing during service periods. Train staff on cocktails, wines, spirits and beverage service. Coach team members on five-star service standards. Monitor staff performance and provide constructive feedback. Lead by example and maintain a positive team environment. Ensure staff maintain professional grooming and personal presentation. Assist with staff scheduling and leave planning where required. Ensure all bar staff understand and follow lodge SOPs. 6. Service Standards Maintain consistent five-star beverage service standards. Ensure beverages are served at the correct temperature and in the appropriate glassware. Ensure correct garnishing and presentation of cocktails. Maintain excellent timing during breakfast, lunch, dinner and evening service. Coordinate with waiters, butlers, kitchen and Front of House to ensure seamless service. Assist during special functions, private dinners, bush dinners and sundowner experiences. Ensure all guest dietary or beverage-related requirements are communicated appropriately. 7. Compliance, Hygiene & Responsible Service Ensure compliance with applicable liquor legislation and lodge policies. Promote responsible service of alcohol. Never serve alcohol to guests who are visibly intoxicated. Maintain excellent hygiene and food-safety practices. Ensure all bar equipment and preparation areas are hygienically maintained. Follow lodge health and safety procedures. Report breakages, accidents and hazards immediately. Ensure correct handling and storage of beverages. 8. Administration Complete daily bar reports and relevant checklists. Maintain accurate stock and requisition documentation. Record breakages, wastage and transfers. Assist with beverage cost analysis where required. Communicate stock requirements to the F&B Manager. Participate in departmental meetings. Ensure all relevant SOPs and checklists are followed. MINIMUM QUALIFICATIONS & EXPERIENCE Education Grade 12 / Matric or equivalent. Hospitality, Food & Beverage qualification would be advantageous. A recognised Food & Beverage Service qualification is advantageous. The current South African National Occupational Certificate: Food and Beverage Service Attendant is registered at NQF Level 4. Mixology/Bartending qualification or recognised training would be advantageous. Wine qualification such as WSET, Cape Wine Academy or equivalent would be advantageous. Experience Minimum 3–5 years' bartending experience, preferably in a luxury hotel, five-star lodge, safari lodge or high-end restaurant. Previous experience as a Senior Barman, Head Barman or Bar Supervisor is strongly preferred. Previous experience supervising or mentoring junior bar staff. Experience in a remote lodge or safari environment would be highly advantageous. Proven experience with beverage stock control and stock takes. Experience with cocktail preparation and mixology. Strong wine, spirit and beverage knowledge. Five-star safari operations commonly look for previous luxury-hospitality experience together with strong wine, cocktail, food and beverage knowledge.
